ONE OF MICHELIN GUIDE’S TOP CHEFS CREATES DYNAMIC CUCINA ITALIANA MENU IN HISTORIC LOCATION
 
Fabio Flagiello knew what he wanted to do for his career very early in life. Born and raised in Trieste, Italy Fabio told his mother when he was just nine years old that he wanted to be a chef.  The family enrolled him in a cooking school in his hometown and the rest, as they say, is culinary history.
 
Fabio has worked at the famed Danieli Hotel in Venice, Italy, the Pastavino Restaurante in Paris, France and Fabio Restaurante in Venice Beach, California.  Most recently, Flagiello was chef and co-owner of Risibisi Restaurant and Wine Bar in Sonoma County.  That is where he was recognized by the Michelin Guide as a Top 50 Gourmand for 2008.
 
Today, Fabio has opened one of the finest Italian restaurants anywhere in Brio Ristorante located at 1190 California Ave, (at Broadway) in the historic Burlingame Train Depot that was built in the late 1890’s.
 
The menu Flagiello has created at Brio Ristorante is truly inspired Cucina Italiana.  I want my new restaurant to be a fine Italian dining experience in an atmosphere that is as comfortable as being at home,” Fabio stated.  “I’m going to change the menu to go along with the seasons and use nothing but the best local ingredients.”

From north to south: Fabio Flagiello has put the finishing touches on a totally revamped menu at Brio, the Burlingame restaurant (1190 California Drive) where he took over in July.  
 
San Francisco restaurateur Pino Spinoso (Cafe Tiramisu, Belden Taverna, Brindisi) opened Brio in December 2007, taking over the former Pisces space in a renovation that seemed to last forever. In May, Flagiello left Risibisi in Petaluma, and two months later partnered with Spinoso at Brio.  
 
Flagiello says he's kept very little of the original menu, and has added wild boar, braised rabbit and short ribs, quail, a wider selection of pastas, a new cheese course and desserts.  
 
He says he's excited about bringing a high level of Italian food to the
Peninsula, adding that his long-term goal is to get a Michelin star.
